Mexican burritos with lime-curd dip

Colorful vegetable wraps filled with creamy guacamole, crunchy walnuts, and a spicy blend of bell peppers, beans, and onions. Top the burritos with a delicious lime-curd dip and enjoy!

Preparation

Cook the rice according to the instructions on the package.

Peel and finely chop the onion and garlic clove. Cut the bell peppers into 1x1 cm cubes. Add the oil to a pan and sauté the onion and garlic. Add the bell pepper, World Spice Meal - Burrito, black beans, and ½ teaspoon salt and cook for 5 minutes.

Halve the avocados and remove the pit and peel. Mash the avocado with the remaining salt and 1 tablespoon lime juice to make a guacamole.

Mix the cottage cheese with the remaining lime juice to make a dip. Roughly chop the walnuts and cilantro. Tear the iceberg lettuce leaves. Prepare the wraps according to the package directions.

Top each wrap with the guacamole, rice, lettuce, bean mixture, walnuts, and cilantro. Roll up and serve with the lime-curd dip.
