Mexican vegetable burrito with guacamole

For a vegetarian version of this dish, you can substitute the half-and-half ground beef with halloumi. Just as delicious!
Preparation
Peel and finely chop the shallot. Peel the lime zest (don't grate the white part, as it's bitter) and juice the lime. Halve the avocados, remove the pith, and scoop the flesh out with a spoon. Cut the avocados into cubes.
Mash the avocados coarsely with a fork. Add the shallot, lime zest, and juice and mix well. Season the guacamole with black pepper and sea salt.
Heat the olive oil in a pan and cook the ground beef for 3 minutes. Add ¾ of the Burrito Spice Mix, the tomato paste, and the Mexican stir-fry vegetables and cook for another 5 minutes.
Divide the vegetable mixture over one half of the bell pepper chili tortillas, top with the guacamole, and fold the tortillas closed by first folding the sides inward and then rolling them up.
Cut the tortillas in half and divide the remaining Burrito Spice Mix over the tortillas.
