Enjoy the flavors of autumn with this spicy carrot soup! Perfect for a cold day, with carrots, sweet potato, and a delicious blend of turmeric, ginger, and cloves. Warm, nourishing, and packed with flavor!

Preparation

Heat a tablespoon of oil or ghee in a large soup pot over medium heat.

Add the finely chopped onions and garlic and cook for about 3-5 minutes until soft and translucent.

Add the carrots and sweet potato and cook for 2-3 minutes with the onions and garlic.

Then add the Turmeric, Ginger, Cloves, White pepper, Sea salt, and Chili powder and briefly cook the spices to release their flavor.

Deglaze with 1 liter of water, just enough to cover the vegetables, and add the stock cubes and Bay leaves.

Bring the soup to a boil, then reduce the heat and let the soup simmer gently for about 20-25 minutes, until the vegetables are tender.

Remove the Bay leaves and Cloves from the soup.

Purée the soup with an immersion blender or a regular blender until smooth. If necessary, add extra water to achieve the desired consistency.

Taste the soup and season with extra White Pepper, Sea Salt, or Chili Powder to your liking.

Ladle the soup into bowls and garnish with a spoon of quark, some drained lentils, chopped parsley, and a drizzle of chili oil.

Serve the soup warm.
